The Cheeses

Seasonals | These beauties are here for a good time, not a long time.

  • True Triple Crème French Brie-Style (cow) | Chateau De Bourgogne, our forever favourite here at B&B, this stuff is MAGIC! Absolute opulence. Very rich, creamy, decadent, buttery, sexy, romantic and so damn delicious. It’s perfect on its own, spread on bread or a cracker, we also LOVE it with raspberry jam, honey and pistachios. The dreamiest.

  • Blue Stilton (cow) | One of England’s most famous cheeses, and a classic blue popular around the world. Firmer, slightly crumbly texture plus smooth and buttery flavours, plus salty, piquant, and sultry, full-bodied blueness.

  • Roquefort PDO (sheep) | If you’re into blues, you’re probably already in love, and if you haven’t tried it, it’s a MUST. This luxe and robust, soft sheep cheese is made with raw milk matured for at least 90 days and at least two weeks in the Combalou caves of France. Soft, moist and open texture with graceful pockets of blue-green. A wonderfully complex cheese, herbaceous, fruity, and salty umami notes.

  • Tomato + Basil Gouda (cow) | Or as we call it at the kitchen studio, “Pizza Cheese”! Sundried tomato, fresh basil and creamy Gouda, seems simple, one bite and you’ll be HOOKED!

  • Gouda Aged One Year (cow) | Sweet, mild, creamy with a dense and springy texture. This award winning gouda is from right in our backyard. Local farm, small batch and artisanal. A real crowd pleaser.

  • Gruyère AOP (cow) | A less robust, easy eating Alpine cheese. Slightly sweet, slightly salty, lush and bouncy with delicate complex nutty, earthy notes.

Mainstays | Nothing basic about them ~ delicious and adored.

  • Canadian Brie (cow) | Our namesake cheese, ‘cause you can never go wrong with a pretty brie. We recommend brie be included on every platter. Silky, milky and creamy, with buttery smoothness and a white mushroom freshness. So elegant and so versatile. We love it with nuts and wrapped in a slice of prosciutto, also amazing with fruit and jams, and well, basically anything! And yes! We definitely eat the rind!

  • B&B Whipped Goat Cheese (goat) | Smooth and pillowy, tangy, bright and elevated. Once you have a spoonful slathered on a cracker, there is no turning back - this stuff is delicious! Whipped in house with B&B secret recipe using local, fresh goat cheese. Dreamy. We love it with olives, jams and nuts.

  • Boursin Herb & Garlic (cow) | Everyone’s fave! Ultra creamy, garlicy and herbaceous creamy-style cheese. Always the first one eaten and the first cheese gone.

  • Comté AOC (cow) | Our favourite alpine cheese and one of Europe’s greats! This is a lovely mountain cheese, hard and smooth texture and very complex flavours - research has identified more than 80 different aromas in this stunning cheese! Toasty nuttiness, sweet milk and brown butter, savoury gaminess, and elegant whisps of meadow florals and herbs.

  • Saint Paulin (cow) | This buttery semi-soft cheese has a orange rind and ultra smooth texture with sweet flavors of warm milk and walnut. Pleasantly mild and milky and easy to pair. If you want to try something new, but don’t like strong cheeses, this is a great choice.

  • Old Canadian Cheddar (cow) | not your basic cheddar, this baby slaps. Sharp and bold with a smooth though slightly crumbly bite. Lush and tangy, flavours of sweet milk and classic “cheesiness”, plus a slight savoury nuttiness giving a more rounded rugged character. Easy for everyone and it holds its own with many accompaniments, making it super versatile on a platter. We especially like it with jams and jellies, or wrapped in a oily slice of meat.

  • Smoked Mozzarella (cow) | Bouncy, light and just a little bit smoky, great texture, easy flavour, a fan favourite. We think this cheese is especially great with pepper jelly, salami and olives.

  • Manchego PDO (sheep) | Sweet, savoury, milky and nutty, we LOVE Manchego! Given a little time at room temp she’ll sing with complexity, developing rich and sultry flavours like fried mushrooms, buttered popcorn, toasty caramel, and a sturdy undertone of sheepy gaminess. We love it with olives and nuts.

  • Midnight Moon Goat Gouda (goat) | This romantic blush-hued goat’s milk gouda is one of our absolute favourites at B&B. If you think you don’t like goat’s cheese, this one WILL change your mind. Notes of brown butter, caramel, toasted nuts and sweet milk. Dense, smooth, slightly crumbly texture.

  • Parmigiano Reggiano PDO (cow) | If you think this cheese is just for grating on pasta, you are missing out! Parmigiano is an awesome addition to a platter bringing a harder texture to your grazing piece. Balancing fruity, floral, umami and dairy notes, with a crunchy, salty bite. We love Parmigiano with olives and prosciutto, bubbles and juicy reds.

FAQs
  • We require a minimum of 48 hours notice to fill an order, however we ask for 7 days minimum notice for grazing/catering orders serving 30+ people.

Sometimes we can fill orders with only 24 hours notice or less, TEXT 403.874.7006 to confirm that we have the supplies before placing your last minute order.

We can accommodate a very large number of orders each day, however we do have a limit and do occasionally fully book up. We recommend you place your order as soon as you have confirmed your date, to reserve your spot!

  • We make all of our grazing pieces to order, the same day of your delivery/pickup. This is our bold commitment to maximum freshness and we do generally recommend scheduling your delivery/pickup for the same day of your event to continue this commitment.

However, we understand that isn’t always possible, so we do everything on our end to improve longevity. Some pieces do hold up better than others.

Grazing Platters can be kept in the fridge and served up to 36 hours after delivery/pickup. Keep in mind that condensation will affect the texture of crunchy items. The longevity of these makes them a fabulous choice for next day brunches, and gifts when you don’t know the recipients meal plans.

Solo Grazing Boxes are best consumed within 12 hours of delivery/pickup and are best kept in a cool, dry location, out of direct sunlight with very minimal moisture - the clear lids may take on unsightly condensation and make crackers soggy if kept in a standard fridge. That said, we have had hundreds of clients store their Solo Boxes overnight in the fridge, without issue. Textural changes and slight colour transfer are likely, and totally safe.

Small Bites are recommended to consume the same day of delivery or pickup, however there are some exceptions that last longer, please email us at grazing@brieadbanquet.com and we can make something work for you.

  • Yes! We offer gluten-free, vegan, vegetarian, non dairy, pork, no nuts, and halal options!

As you are going through checkout, you will click the option you need while placing your order.

One exception is our Monthly Subscription Picnic Boxes, they are only available with or without meat.

  • We work with highly perishable ingredients and inclusions.

We do not accept returns or cancellations, or offer order changes, refunds, credits, or transfers of any kinds. All payments are non-refundable.

Grazing Table & Grazing Board booking deposits are specific to the date booked and are not transferable to new dates or refundable.

  • We are open Wednesdays through Saturdays for orders of any size, and by appointment only wit a $500 minimum spend on Sundays, Mondays & Tuesdays.

For fully booked and closed dates CLICK HERE.

  • PICKUPS are available Wednesday thru Saturday from 11am to 2pm for orders of any size, and by appointment on Sundays, Mondays and Tuesdays for orders over $500, at 524 42 Ave SE Calgary.

DELIVERIES We offer one delivery window for general to-the-door deliveries 10am - 5pm. We can not guarantee exact delivery times. During checkout we will ask for your event start time and work with you to have your items arrive before your event starts, if course!
